Canyoneering—rock scrambling, cliff jumping, swimming, and abseiling down waterfalls—is an epic adventure sport and it only gets better in the Azores. We set out with Picos de Aventura for a full day at Salto do Cabrito—a place straight out of Jurassic Park with pre-historic ferns, steaming fumeroles, and a river gushing through a craggy canyon. With harnesses and a dose of moxie, we rapelled down 45-foot waterfalls and are still on an adrenaline high.
